Holland America Line is pleased to announce that esteemed Culinary Council member Mark Best will join a 7-day Roundtrip Vancouver Alaska sailing on ms Noordam departing on 19 September. While on board, he will appear in the ship’s Culinary Arts Center to demonstrate a selection of his favorite dishes, and guests will also have the opportunity to dine at the Pinnacle Grill and enjoy an exclusive dinner featuring Mark’s signature dishes.
“Seeing Alaska has long been an item on my bucket list. I’ve always known Holland America Line has led the way when it comes to exploring this incredible region. The combination of sharing this experience with other likeminded guests and showing off my love of cooking in the Culinary Arts Center is extremely humbling,” said Mark.
Mark is regarded as one of Australia’s top chefs, known for his innovative techniques and approach to food. He joined Holland America Line’s Culinary Council in 2014 and has been providing recipes and guidance to the Council ever since. His dishes are offered on the Main Dining Room menu and include:
- Sweet breads with roast cos lettuce, burnt bread sauce
- Quail with pumpkin ‘tofu’, roasted Brussels sprouts, pork crackling, button onions
- Short-rib with smoked onion, black pudding
His fine dining restaurant, Marque, in Sydney’s Surry Hills has not only garnered acclaim in Australia, but also has been recognised internationally on the illustrious San Pellegrino 50 Best Restaurants list. His newly opened and toqued Pei Modern restaurants, located in both Sydney and Melbourne, offer a more casual approach to Mark’s celebrated food.
